The easiest place for me to fix the gap was between the intake manifold and the head. Like I said before, the easiest solution is to simply drill and tap the exhaust manifold.

I've since picked up another 2 diesels, and another 3 manifolds, and knowing what I know now, I probably would have just taken the easy way out. I'm in the same boat with the 83' setup, though I'll be running a front mount intercooler shortly, so the offset from a spacer wouldn't be an issue. Can you install a wideband into the exhaust pipe or use a 5 gas emission analyzer if you have access to it? An EGT is going to give some relative change as it gets richer and leaner but you won't get much insight into how it's burning beyond that.

You can put the thermocouple as close as you can access. The temperature range on that sensor you listed is way hotter than your engine is going to get. For example, a modern turbo direct injection engine will run around C before the turbo.

If you have a target temperature it's going to be more useful. A gas analyzer is absolutely going to give you the useful readings, but they are not going to measure quickly in fast transients. At higher power levels there is more boost, and more EGT, and more energy required to spin the compressor, because as a turbine gets closer to its max capacity "choke" it becomes less and less efficient. This means it needs more energy heat from the exhaust per psi of boost as it gets closer to its limit. While the "add degrees" thumbrule might work ok at steady state lower power levels, who cares about what EGT is at idle or light load, I care about EGT when it's pushing the limit so I know when to back off.
